We choose only the best raw material according to the highest quality standards, we use only natural aromas, the flavors of our mountain.
We want to offer our customers, young and old, genuine naturally good cured meats.

Aging without haste and without deceit: our philosophy

We let the cured meats rest in our cellars, strictly controlling the parameters involved in order to best dose the pure and lashing air of our Alps to give all the typicality possible.
We do not use process accelerators, but only the characteristic mold of the our cellars.

The slow and gradual reduction of humidity creates natural fermentation and enzymatic phenomena thanks to which the cured meats will keep very well even at room temperature, maintaining their wholesomeness. An excellent seasoning ensures goodness, naturalness and wholesomeness.

We adopt state-of-the-art systems to remotely manage the temperature of our cellars and possible problems at any time.

Technology at the service of quality, to make sure that all the details are handled flawlessly and quickly in order to allow our cured meats to 'age' well.
